"A delicate yet precise bouquet of white fleshed fruits and lemon, chamomile tips and white peach. The mineral quality is instant with a a chalk and seashell scents. Crisp, light and dry with medium+ acid line and a satin touch. Flavours of citrus then stone fruits, floral and white soil soils. Crisp, dry, classic, no wood and delicious."
 - Cameron Douglas MS

Balanced white and yellow fruits, a touch of citrus and grapefruit in the mix. Medium bodied with a rounded mineral finish to reveal its terroir. Such class and elegance.

The Petit Chablis area of appellation covers 1,230 ha of which approximately 1,000 ha are currently under vine. The vines grow on Portlandian limestone plateaus, with clay from the Tertiary Era. Grapes were brought in the winery for a long pressing. Once the juice was settled, the fermentation started with the addition of selected yeasts in stainless steel tanks under controlled temperatures (20°C.) to preserve as much fruit as possible. To get more supple wine, the malolactic fermentation began 10 days after the alcoholic fermentation; and it ended by the end of November. The wine was then aged on partial lees for 5 months.
