Malt Whisky is produced only from 100% malted barley.  To be a single malt, the whisky must have been distilled at a single distillery using the pot still distillation process and made from a mash of 100% malted barley. And the "Scotch" part? That means it's from Scotland! You can have single malt Irish Whiskey, Japanese, etc. And while there are undoubtedly many worthy whiskies to be tried from these other shores, any journey of discovery into the world of single malts should most certainly start, and indeed finish, in Scotland.

    A stalwart from Speyside, the Balvenie distillery is just next door to Glenfiddich and is known for its custardy, creamy style of whisky. This 'Doublewood' expression is a combination of two cask types, one American oak and the other from Spanish sherry casks. Sherry and honey mingle together along with dried fruits, Christmas spices and baking green apples. A classic expression of Scotland's famous Speyside region.

    On the nose, gristy, supple nuttiness intertwined with spices. Honeyed sultanas and grapes. Hugely inviting. Sweet palate with good body. The bourbon characters develop; gentle spice with a little vanilla, a hint of balancing peat lurking quietly in the substrata. Dried fruit too, combining with nuts, nutmeg, cinnamon, back into the bourbon notes - so well integrated. Spicy finish, slightly drying, still sweet.

    The Balvenie Caribbean Cask 14 year old single malt whisky has been matured in traditional oak whisky casks for 14 years, and then ‘finished’ in casks that previously held Caribbean rum.

    To create the ideal finish Malt Master David C. Stewart MBE filled American oak casks with his own blend of select West Indian rums. The result is an exceptional single malt whisky with the traditional smooth, honeyed character of The Balvenie married with notes of toffee and a hint of fruit, with a warm, lingering finish.
