Ombre Organic Prosecco NV
Ombre is heir to a long-standing tradition rooted in the Veneto region, where ‘ombra’ means a simple glass of wine. The bottle alludes to historical practice where the freshness of wines was preserved in shade of the majestic bell tower, an iconic landmark in the heart of Venice, the most romantic city in the world. A delicate bouquet of spring blossom, citrus, and green apple leads to a harmonious palate with great freshness and a persistent aftertaste.
Thorough and careful organic cultivation of the vine generates healthy grapes that give Ombre it’s elegant texture. The soft pressed juice is racked and inoculated with selected yeasts, it will go through fermentation at a controlled constant temperature of 18 C for 8-10 days. After a storage period, the addition of saccharose and selected yeasts to undergo second fermentation (Martinotti Charmat method) at a controlled temperature of 14C in a pressure tank. Once fermentation reaches the required level the tank is refrigerated, cold stabilized (and filtered and before bottling.
