Environment-friendly viticulture, with low yields and a great deal of manual labour, forms the basis for this wine. All the vineyard and cellar operations are carried out according to the lunar calendar, and the grapes are left to ferment spontaneously with indigenous yeasts. Carandelle is a 100% Sangiovese wine from a vineyard of the same name, aged for 10 months in French oak barrels. Carandelle is the quintessence of Sangiovese because it comes from the combination, in the same vineyard, of 6 different sub-varieties from the historic areas of Tuscany.
