Bianco is mainly made from old vines that grow on the northern slope of Mount Etna at 600 to 900 meters above sea level – a truly alpine cool climate. A mixed set of indigenous grape varieties, predominantly Carricante (70%), with the rest consisting of Catarratto, Minella, Grecanico, and Inzolia. Everything has been organically farmed here since the beginning in 2002. Etna Bianco is fermented and aged in steel tanks. Delicate lemon yellow with a hint of silver. Clear, yellow-fruity nose with juicy pear, yellow apple, lemon blossom with a subtle smoky minerality, also Mediterranean herbs such as flamed rosemary and thyme. This wine has a wonderful saltiness that makes your mouth water. Salted lemon, yellow fruit blossoms, and orange blossoms with a hint of guava, apricots, freshly peeled almonds, and then more and more of the intense, juicy pear. The freshness tingles and sings in the mouth, accompanied by a wonderful, delicate texture. So refreshing and precise, an outstanding drinking wine with a unique character.
