"Deep purple colour with aromatic notes of red berry and blackcurrants framed by violet overtones and subtle cedarwood spice. The palate is dense and plush with flavours of blood plum, chocolate, blueberry and spice with a supple, slippery mouthfeel framed by subtle oak toast and fine tannins. A generous wine, packed full of flavour that belies it’s moderate weight and finished alcohol, perfect with any red meat dishes"
Sourced from a selection of mature, dry-grown vineyards in Langhorne Creek managed by Jim Zerella. The fruit is partially hand-harvested before de-stemming and cool fermentation in small two tonne open fermenters with regular hand plunging. A small component of the blend is cool distilled whilst another undergoes ultra-membrane filtration. With very gentle handling, these components are masterfully blending back into the original parcel of wine to arrive at a well-integrated, lighter finished ABV. Followed by six months maturation in a combination of second-use oak and stainless steel before bottling.
