2021 is a great Chablis year with really tiny yields. Pico has a program of strict yield control and a commitment to organic & Biodynamic viticulture. The Mise Tardive bottling is a Chablis that spent an extra year aging on the lees before bottling. Given that the wines from this estate are about purity and mineral intensity, this extra year of élevage worked wonders on this rich white Burgundy.
“A great wine, the longer elevage on lees compared to the regular version has given it even more freedom and depth. Rich yet typical nose with butter, wax, crushed seashell, preserved lemon. Medium-bodied, it shows a beautiful three-dimensional texture with rounded edges enlivened by juicy flavors of citrus and white peach. The overall balance is nearly perfect, driven by fresh, iodized acids through to the salty long palate, featuring wet rock-like minerality and fine bitters. This is one of the best Village Chablis made, always achieving Premier Cru quality. Just brilliant, with Pico at his best again.”
