"This is one of the best Pinot Grigios we have tasted in a long while. Carefully selected grapes from the gently rolling hills of Rubicone IGT at altitudes of 100-150m above sea the Da Vinci I Capolavori Pinot Grigio ‘Dama Ermellino’ stands out thanks to two qualities: the precision of its aromas and the creaminess of the mouthfeel. The nose reveals orchard fruit, white fleshed peach and a hint of pear. On the palette, this wine shows lovely energy, focus and freshness. Sourced from vineyards with lightly chalky, medium-textured clay, soils from the Bertinoro, Brisighella and Faenza districts. Carefully selected grapes from the gently rolling hills of Rubicone IGT at altitudes of 100-150m above sea are harvested around the end of August.
The grapes are lightly pressed, and the fermentation takes place at low temperature of 13-18 °C, in order to develop fine fruity, floral aromas while maintaining the wine's classic fresh notes. The wine is aged in temperature-controlled stainless steel tanks for just a few months with light batonnage of the lees to add richness before being bottled to preserve the wine’s elegant freshness. Delicate floral and pear aromas with a hint of jasmine are followed by a lemon fresh delicate palate that is the perfect accompaniment a wide variety of seafood and vegetable dishes.
