In 2020 the harvest started on the 8th of September and finished with the Mataquemada parcel on the 3rd of October, 2 weeks earlier than the average in the last 20 years. The grapes were harvested into 20kg stored between 0 and 1 degrees in a cool room with controlled humidity. Fermented in an open top fermenter with 40% of whole bunches included in a layer cake fashion. Gentle punching down was applied once or twice a only during a long, slow, soft fermentation after the grapes warm up from their cold soak.
